Ham and corn Melba toasts

Whip up a quick and delicious homemade snack.
Ingredients:
  • 2 slices wholemeal bread, crusts removed
  • 65g (1/4 cup) corn relish
  • 40.00 gm light cream cheese
  • 2 slices shaved ham, chopped
  • Olive oil spray
Instructions:
  • Preheat the oven to 180°C and prepare a baking tray lined with non-stick baking paper.
  • Roll out bread slices thinly using a rolling pin. Cut each slice into 4 triangles. Place on a lined tray. Spray both sides with olive oil spray. Bake for 10-12 minutes, turning once, until golden. Let cool before serving.
  • In a small bowl, mix together corn relish and cream cheese. Spread the mixture evenly over the toasts and top with shaved ham.
