Cheesy ham and corn casserole, versatile as a main or side dish.
Ingredients:
  • 2 cups cubed cooked ham
  • 1 (11 ounce) can whole kernel corn, drained
  • 1 (10.75 ounce) can condensed cream of asparagus soup
  • 3 eggs, beaten
  • 2 tablespoons prepared yellow mustard
  • 2 tablespoons butter
  • 0.75 cup chopped onion
  • 0.75 cup chopped celery, with leaves
  • 2 tablespoons garlic salt
  • 0.5 cup seasoned bread crumbs
  • 0.25 cup grated Parmesan cheese
  • 0.75 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously spray a 1 1/2 quart casserole dish with vegetable oil cooking spray.
  • Combine cubed ham, corn, undiluted cream of asparagus soup, eggs, and mustard in a medium bowl. In a skillet over medium heat, melt butter and cook onions, celery, and garlic salt until tender. Mix the onion mixture into the egg mixture and transfer to a casserole dish. Top with bread crumbs and Parmesan cheese before baking.
  • After baking covered for 40 minutes, uncover the dish, sprinkle with Cheddar cheese, and bake for another 20 minutes until golden brown and bubbly. Allow it to rest for 5 to 10 minutes before serving.
