Freezable mini muffins, perfect for lunchboxes.
Ingredients:
  • 375.00 gm self-raising flour
  • 20.00 gm caster sugar
  • 40.00 ml chopped fresh chives
  • 193.13 gm milk
  • 1 egg, lightly beaten
  • 115.00 gm vegetable oil
  • 100g shaved leg ham, finely chopped
  • 165.00 ml grated tasty cheese
  • 125g can creamed corn
Instructions:
  • Preheat your oven to 190°C (170°C fan-forced) and generously grease 2 mini muffin pans each with 24 holes, each hole being 1 1/2 tablespoons in capacity.
  • In a bowl, mix together flour, sugar, chives, and ham. Create a well in the center.
  • Mix together the milk, egg, oil, cheese, and corn until just combined. Season with salt and pepper, then spoon the mixture evenly into the prepared pans.
  • Bake until golden and firm to touch, about 18 to 20 minutes. Let cool in pans for 5 minutes, then transfer to a wire rack to cool further. Enjoy warm or cold.
