Cheesy ham, cheese, and rice muffins that melt in your mouth. Easy, quick, perfect for lunch or snack. Make ahead and freeze for convenience. Your new favorite muffin recipe awaits!
Ingredients:
  • 75g butter, melted
  • 40g sliced ham, finely chopped
  • 125g tub brown rice, grains separated
  • 1 zucchini, coarsely grated
  • 2 x 125g corn kernels, drained
  • 40g (1/2 cup) grated pizza cheese
  • 3 eggs, lightly whisked
Instructions:
  • Preheat oven to 200C/180C fan forced. Brush 22 mini muffin pan holes with melted butter and chill in the refrigerator until needed.
  • Combine ham, garlic, rice, zucchini, corn, cheese, and egg in a large bowl before spooning evenly into prepared holes. Bake for 20 minutes until the egg is set.
  • Allow the melters to rest for 2 minutes in the pan before transferring them. Let them cool down and then serve.
