Corn and ham mini quiches

Ingredients:
  • 8 slices wholegrain or multigrain bread, crusts removed
  • 20g butter, softened
  • 35g cheddar cheese
  • 50g ham slices, finely chopped
  • 2 green onions, trimmed, thinly sliced
  • 6 eggs, lightly whisked
Instructions:
  • Preheat the oven to 160°C. Roll out the bread slices using a rolling pin to a thin 5mm thickness. Brush each slice with butter. Arrange the buttered bread slices in eight 1/3-cup capacity muffin pans, buttered-side down.
  • Distribute the corn, cheese, ham, and green onions evenly in the muffin pans. Pour the egg mixture evenly into each pan. Bake in a preheated oven for 15 minutes until just set and lightly golden. Let cool slightly after removing from the oven, then chill in an airtight container in the fridge.
