Kid-friendly and light dish.
Ingredients:
  • 150g sliced leg ham, chopped
  • 420g can corn, drained, patted dry with paper towel
  • 40g cheddar cheese
  • 7 eggs
  • 80ml milk
  • Tomato & cucumber, to serve
Instructions:
  • Preheat the oven to 200°C and prepare a 16 x 26cm slab pan by greasing it and lining the base with overhanging non-stick baking paper.
  • Spread a layer of ham, corn, and cheese over the lined pan. Combine the eggs and milk, then pour the mixture over the ingredients in the pan.
  • Bake the frittata for 25-30 minutes, or until set. Let it rest in the pan for 5 minutes, then cool on a wire rack for 10 minutes.
  • Cut into bite-sized portions and enjoy warm or at room temperature. Pair it with a refreshing tomato and cucumber salad for a perfect combination.
