One-skillet breakfast with eggs, onion, bacon, and potatoes - a hearty and quick camp favorite for two.
Ingredients:
  • 6 slices bacon, cut crosswise into 1/4-inch pieces
  • 1 tablespoon olive oil
  • 2 white potatoes, cubed
  • salt and ground black pepper to taste
  • 1 onion, chopped
  • 4 eggs, beaten
Instructions:
  • Fry bacon in a large skillet over medium heat until crispy, approximately 5 minutes. Remove to a paper towel-lined plate to drain, while discarding most of the grease.
  • In the same skillet over medium heat, drizzle olive oil. Add potatoes, season with salt and pepper, and cook, stirring occasionally, until golden brown and slightly crisp, approximately 10 minutes.
  • Combine onion with potatoes and sauté until onion is translucent for approximately 5 minutes. Add bacon back to the skillet and continue to sauté until heated through for 1 to 2 minutes.
  • Drizzle the beaten eggs over the potato mixture, then cook and stir until the eggs are cooked through, about 5 to 6 minutes.
