Greek-style mixed summer vegetables baked in a fragrant tomato herb sauce.
Ingredients:
  • 4 tomatoes
  • 0.5 cup olive oil
  • 2 tablespoons white sugar
  • 0.33333334326744 cup chopped fresh parsley
  • 0.33333334326744 cup chopped fresh mint
  • 0.33333334326744 cup chopped fresh basil
  • 2 tablespoons fresh oregano
  • 0.25 cup capers
  • 2 cloves garlic
  • 2 onions, sliced
  • 2 potatoes, sliced
  • 2 eggplant, sliced
  • 3 zucchini, sliced
  • 3 green bell peppers, sliced
  • 2 cups okra
Instructions:
  • Start by heating the oven to 350 degrees F (175 degrees C). In a food processor, combine three tomatoes, 1/2 cup olive oil, red wine vinegar, sugar, parsley, mint, basil, oregano, capers, and garlic. Blend until you have a fresh tomato sauce. Season with salt and black pepper. Chop the remaining tomato and set it aside.
  • In a skillet over medium heat, sizzle onions in 2 tablespoons of olive oil until they turn slightly golden, about 10 minutes.
  • Combine the onions, potatoes, eggplant, zucchini, bell peppers, okra, reserved chopped tomato, and fresh tomato sauce in a large baking pan. Add a splash of water if necessary to ensure the vegetables are covered with sauce.
  • Roast the vegetables in the preheated oven until they are tender, for approximately 1 hour.
