Brick Lane burger

Delicious veggie burger inspired by Brick Lane's flavors, elevated with grated veg, paneer, and chili for a mouthwatering twist on an onion bhaji.
Ingredients:
  • 2 red onions
  • 1 carrot
  • 200 g butternut squash
  • 100 g paneer cheese
  • 2 cloves of garlic
  • 5 cm piece of ginger
  • 2 fresh green chillies
  • 1 big bunch of fresh coriander (60g)
  • 150 g gram flour
  • 2 teaspoons ground turmeric
  • 2 teaspoons ground cumin
  • 2 limes
  • olive oil
  • 100 ml natural yoghurt
  • 2 baby gem lettuce
  • 1 fresh red chilli (optional)
  • 6 burger buns
  • 3 poppadoms
  • mango chutney
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4. Finely slice the onions and place into a large mixing bowl. Grate the carrot, squash, and paneer into the bowl. Grate in the garlic and ginger. Chop the green chillies and coriander, then add to the mix. Mix in the flour, turmeric, cumin, salt, pepper, lime juice, and water. Shape the mixture into 3cm-thick patties. Fry in oil until golden on each side. Transfer to a baking tray and bake for 10 minutes. For the coriander yoghurt, blend coriander leaves with salt and lime juice, then mix with yoghurt. Prepare lettuce, red chilli, and burger buns. Spread coriander yoghurt on buns, top with crumbled poppadoms, patties, mango chutney, lettuce, coriander, and red chilli. Serve with lime wedges. Enjoy!
