Grilled Chicken Under a Brick

Elevate your chicken by grilling it on a brick, with the option to brine or spice it for extra flavor.
Ingredients:
  • 1 (3 pound) whole chicken
  • 1 teaspoon olive oil
  • 1 pinch salt and freshly ground black pepper to taste
  • heavy duty aluminum foil
  • 2 clay bricks
Instructions:
  • Lay the chicken, breast side down, on a cutting board. Trim the backbone and 1 inch of the breast bone using kitchen shears. Discard the wing tips and any big pockets of fat near the tail. Flip the chicken over and press down firmly with the palm of your hand to flatten it. Rub the skin with oil and season lightly with salt and pepper.
  • Cut two 20-inch pieces of heavy-duty aluminum foil. Wrap each brick with the shiny side of the foil facing outwards. Lightly oil the grill and place the bricks on it.
  • Oil the grill grate and place the bricks. Preheat the grill to 400 degrees F (200 degrees C, then keep the temperature steady until the bricks are hot.
  • Switch off the center burner and position the chicken, flesh side down, on indirect heat over that spot. Place the bricks on top of the chicken and cover the grill.
  • Grill the chicken with bricks for 40 minutes until crispy, then flip and grill for 5 to 10 minutes more until the internal temperature reaches 165°F (74°C). Rest for 10 minutes before serving.
