Pesto-Parmesan Crusted Grilled Chicken

Grill chicken breasts with basil pesto under the skin for a flavorful and impressive meal.
Ingredients:
  • 1 tablespoon olive oil
  • 1 teaspoon finely chopped garlic
  • 1/2 cup Progresso™ panko bread crumbs
  • 1/2 cup basil pesto
  • 3 tablespoons grated Parmesan cheese
  • 4 bone-in skin-on chicken breasts (8.25 oz each)
  • 1/4 teaspoon pepper
Instructions:
  • Preheat gas or charcoal grill. In a 10-inch skillet, warm oil over medium-high heat. Sauté garlic in the oil for about 30 seconds, stirring constantly until fragrant. Incorporate bread crumbs and cook for 2 to 3 minutes, stirring often until golden. Transfer the crunchy mixture to a small bowl and mix in pesto and Parmesan cheese.
  • Gently lift the chicken skin to create a pocket without removing it. Fill each pocket with flavorful pesto mixture, then season with salt and pepper.
  • Grill chicken with skin side down over medium-low heat, covering and cooking for 10 minutes. Turn chicken, spoon any remaining pesto over it, and cook for an additional 10 to 15 minutes until chicken reaches an internal temperature of 170°F.
