Pesto Parmesan Chicken

Create a delicious dish with chicken breasts by coating them in crispy panko bread crumbs.
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 3 tablespoons basil pesto
  • 2 tablespoons mayonnaise
  • 1/2 cup Progresso™ plain panko crispy bread crumbs
  • 1/2 cup finely shredded Parmesan or Asiago cheese
  • Fresh basil leaves, if desired
Instructions:
  • Preheat the oven to 400°F. Line a baking sheet with foil and spray it with cooking spray. Place each chicken breast between sheets of plastic wrap or waxed paper, then gently flatten them to about 1/2-inch thickness using a meat mallet or rolling pin.
  • Mix pesto and mayonnaise in a shallow dish. Combine bread crumbs and cheese in another shallow dish. Dip chicken in pesto mixture, then coat with panko mixture. Arrange on baking sheet.
  • Bake for 15 to 20 minutes, flipping halfway through, until the chicken's juices run clear when the thickest part is cut (165°F) and the coating is beautifully golden brown. Finish with a sprinkle of fresh basil for a burst of flavor.
