Pesto Parmesan Chicken and Pasta

Tasty pesto chicken dinner ready in 25 minutes!
Ingredients:
  • 1 1/3 cups hot water
  • 1 1/2 cups milk
  • 2 tablespoons butter
  • 1 box Chicken Helper™ crispy Parmesan chicken
  • 1/4 cup refrigerated basil pesto
  • 1 lb boneless skinless chicken breasts
  • 1 tablespoon milk
  • 2 tablespoons vegetable oil
  • 3 tablespoons refrigerated basil pesto
  • 2 small plum (Roma) tomatoes, sliced
Instructions:
  • In a 2-quart nonstick saucepan, combine hot water, 1 1/2 cups milk, 2 tablespoons butter, sauce mix, uncooked pasta (from Chicken Helper box). Bring to a gentle boil, stirring frequently. Lower the heat and simmer uncovered for about 12 minutes, stirring frequently until pasta is tender. Remove from heat and stir in 1/4 cup pesto. Cover to keep warm; the sauce will thicken as it sits.
  • Slice each chicken breast at an angle into 3 to 5 pieces that are approximately 1/2 inch thick.
  • In a medium bowl, gently coat the chicken with 1 tablespoon of milk to moisten. Next, generously coat the chicken with the seasoned crumbs from the Chicken Helper box.
  • In a 10-inch nonstick skillet, melt 2 tablespoons of butter with oil over medium heat. Gently add chicken to the hot butter mixture and cook for 4 to 6 minutes until golden brown. Lower the heat to medium-low, flip the chicken, and continue cooking for another 4 to 6 minutes until golden brown and fully cooked.
  • Arrange the chicken on plates. Spread 1 1/2 teaspoons of pesto on each chicken piece. Place tomato slices on top and serve with pasta.
