Broccoli, chicken, and pasta tossed in a zesty pesto and tomato sauce, topped with loads of Parmesan cheese.
Ingredients:
  • 12 ounces rigatoni pasta
  • 0.5 pound fresh broccoli florets
  • 0.25 cup olive oil
  • 1 tablespoon minced garlic
  • 2 tablespoons pesto
  • 1 cup chopped tomatoes
  • 0.75 cup grated Parmesan cheese
  • 1 pound boneless chicken breast halves, cooked and chopped
  • salt to taste
  • ground black pepper to taste
Instructions:
  • Cook the pasta in a large pot of salted boiling water until it's perfectly al dente, then drain.
  • Blanch broccoli in boiling water, then carefully remove and set aside.
  • In a skillet over medium heat, warm up the olive oil. Add minced garlic and pesto, cooking for 2 minutes. Mix in chopped tomatoes and remove from heat.
  • Combine cooked pasta, broccoli, chicken, and tomato mixture in a large bowl. Mix in grated Parmesan cheese, salt, and ground black pepper until well combined. Serve warm.
