One-Pot Cheesy Bacon Ranch Pasta with Chicken and Broccoli

One-pot cheesy bacon ranch pasta for easy cleanup.
Ingredients:
  • 4 slices bacon
  • 0.75 pound chicken breasts, diced
  • 0.5 teaspoon kosher salt
  • 1 medium shallot, finely chopped
  • 2 cups water
  • 1 cup whole milk
  • 4 cups elbow macaroni
  • 1 tablespoon ranch dressing mix
  • 3 cups broccoli florets
  • 1 (8 ounce) package shredded Cheddar cheese
  • 0.25 cup sour cream
Instructions:
  • In a large Dutch oven, sizzle bacon over medium heat until perfectly browned and crispy, about 10 minutes. Pat dry on paper towels.
  • Season the chicken generously with salt and pepper. Sear the chicken in sizzling bacon drippings, stirring regularly, until beautifully golden on all sides, approximately 4 minutes. Place the chicken on a plate and keep aside. Note that the chicken will still be partially raw at this stage.
  • Sauté shallot and garlic in the flavorful drippings for 2 minutes until fragrant. Deglaze with water and milk, scraping up any browned bits. Add pasta and ranch dressing mix, bring to a boil, then simmer for 6 minutes.
  • Add the chicken back to the Dutch oven along with the broccoli. Simmer until the pasta is tender and the chicken is fully cooked, for about 3 to 4 minutes. Gently mix in the Cheddar cheese and sour cream until well combined. Sprinkle the crumbled cooked bacon on top and serve piping hot.
