Elevate weeknight dinner with basil pesto and Parmesan-crusted salmon fillets.
Ingredients:
  • 1.5 pounds salmon fillets with skin on
  • 1 teaspoon kosher salt
  • 1 teaspoon ground smoked black pepper (such as McCormick® Smokehouse)
  • 2 tablespoons pesto in olive oil
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons butter, melted
  • 1 tablespoon lemon juice
Instructions:
  • Preheat the oven to 350°F (175°C) for delicious baking perfection.
  • Using pliers, carefully remove any salmon bones. Cut the salmon into 5 equal portions and lay them skin side-down on a piece of aluminum foil. Place the foil-wrapped salmon in a large baking pan, season with salt and pepper, and cover loosely with foil.
  • Place in the hot oven for 10 minutes.
  • Take the baking pan out of the oven and uncover. Spread pesto over each piece of salmon. Sprinkle with Parmesan cheese. Bake without cover until the cheese is melted, approximately 10 minutes.
  • Combine melted butter and freshly squeezed lemon juice in a small bowl, then generously drizzle the mixture over the succulent salmon.
