Grilled salmon topped with homemade basil pesto, broiled to create a flavorful pesto-crusted fillet.
Ingredients:
  • 0.25 cup pine nuts
  • 0.5 cup coarsely chopped fresh basil
  • 0.25 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 3 tablespoons extra-virgin olive oil
  • salt and freshly ground black pepper to taste
  • 1 pound salmon fillet
Instructions:
  • Toast pine nuts in a small skillet over medium heat until fragrant, about 5 minutes, stirring frequently.
  • Combine fresh basil, savory Parmesan cheese, toasted pine nuts, and pungent garlic in a blender until a luscious paste forms. Slowly drizzle in fragrant olive oil while blending until the pesto reaches your desired creamy texture; season generously with salt and pepper.
  • Prepare the outdoor grill by preheating it to medium-high heat and greasing the grate with a light coating of oil. Season both sides of the salmon with salt and pepper.
  • Grill salmon skin-side down until 2/3 done, 8 to 15 minutes. Transfer to a baking sheet, spread with pesto. Save any extra pesto for later.
  • Position oven rack 6 inches from the heat source and preheat the broiler.
  • Cook the salmon under the broiler until it easily flakes with a fork and the pesto is bubbling, approximately 5 minutes.
