Brie and asparagus tart

Impress your guests with this delightful dish.
Ingredients:
  • 1 sheet ready-rolled frozen puff pastry, partially thawed
  • 30.30 gm pure cream
  • 11.80 gm dijon mustard
  • 2 bunches asparagus, trimmed, blanched (see note)
  • 70g brie cheese, sliced
  • Salad, to serve
Instructions:
  • Preheat the oven to 220°C/200°C fan-forced and line a baking tray with baking paper.
  • Lay the pastry on the prepared tray. Create a 2cm border around the edge of the pastry using a small knife (do not cut completely through). Use a fork to prick the center of the pastry 4 times. Bake for 6 minutes, or until the pastry is puffed and lightly browned.
  • Whisk together egg, cream, mustard, and salt in a small bowl until combined.
  • Take the pastry out of the oven and gently re-cut along the border line without cutting all the way through. Press down on the center of the pastry, then lay the asparagus in a single layer on top. Add brie, pour over the egg mixture, and season with pepper. Bake for 9 minutes until the pastry is golden and the egg is just set. Serve with a side salad.
