Brie and potato frittata bites

Easy entertaining with delicious potato frittata bites.
Ingredients:
  • Olive oil, to grease
  • 3 (about 600g) desiree potatoes, peeled, halved
  • 4.60 gm olive oil
  • 1 red onion, halved, thinly sliced
  • 8 eggs
  • 125g (1/2 cup) sour cream
  • 40.00 ml finely chopped fresh chives
  • 150g brie, thinly sliced
Instructions:
  • Preheat your oven to 180°C. Lightly brush a 20 x 30cm lamington pan with oil and line the base and two long sides with non-stick baking paper, leaving an overhang on the sides.
  • In a large saucepan, cover the potato with cold water and bring to a boil over high heat. Cook for 10-15 minutes until the potato is tender. Drain and let cool for 5 minutes.
  • Heat oil in a medium non-stick frying pan over medium heat. Sauté the onion, stirring occasionally, for 5 minutes until softened.
  • Whisk together eggs, sour cream, and chives in a large jug using a fork. Season with salt and pepper.
  • Thinly slice the potato using a small sharp knife. Layer half of the potato slices over the base of the lined pan followed by half of the onion and half of the brie. Repeat layering with the remaining potato, onion, and brie. Pour the egg mixture over the layers. Bake in the oven for 30 minutes or until golden and just set. Allow it to cool for 30 minutes before serving.
  • Slice the frittata into squares using a large serrated knife and arrange them on a serving platter for an elegant presentation.
