Indulge in juicy chicken breasts stuffed with gooey brie and fresh shallots.
Ingredients:
  • 8 large green shallots, trimmed, cut into 10cm lengths
  • 4 (about 140g each) single chicken breast fillets, trimmed
  • 125g brie, cut into 8 long strips
  • 12 thin slices prosciutto
  • Steamed desiree potatoes, thickly sliced, to serve
  • Dressed baby spinach leaves, to serve
Instructions:
  • Preheat your oven to 200°C. Heat oil in a large non-stick frying pan over medium-high heat. Sauté green shallots for 5 minutes, stirring occasionally, until they soften slightly. Transfer to a plate to cool.
  • Make a deep pocket in each chicken fillet using a small sharp knife. Fill one side of each fillet with 2 slices of brie and 1/4 of the green shallots. Fold the other side over to cover the filling and wrap each fillet with 3 slices of prosciutto to secure.
  • Heat the frying pan over medium-high heat, then place the wrapped chicken fillets in and sear each side for 2 minutes until golden brown. Transfer the fillets to a roasting pan and bake in a preheated oven for 10 minutes or until the chicken is cooked through.
  • Diagonally cut the fillets in half and plate with the potatoes and dressed spinach.
