Crispy chicken with prosciutto, brie and spinach

Delight the whole family with our versatile meal featuring crispy adult-friendly chicken paired with kid-friendly chicken cordon bleu.
Ingredients:
  • 800g cream delight potatoes, peeled, quartered
  • 193.13 gm milk, warmed
  • 4 (500g total) chicken breast minute steaks (see notes)
  • 2 slices prosciutto, halved crossways
  • 100g baby spinach
  • 60g brie, thinly sliced
  • 312.50 ml dried panko breadcrumbs
  • 75.90 gm vegetable oil
  • Steamed green beans, to serve
Instructions:
  • In a pot, simmer potato in cold water until tender. Drain and return to pot over low heat to remove excess liquid. Mash potato, then mix in warm milk until smooth. Season with salt and pepper. Enjoy!
  • Begin by sandwiching the steaks between two sheets of plastic wrap. Use a rolling pin to gently pound the steaks until they are 1cm thick. Next, layer the steaks with prosciutto, spinach, and brie, and season with pepper before folding them over to seal in the delicious filling.
  • First, spread flour on a big plate and breadcrumbs on another one. Next, beat the egg in a shallow dish. Coat the chicken lightly with flour, shaking off any extra. Dip the chicken in the egg, then in the breadcrumbs, pressing gently with your fingertips to make sure they stick.
  • In a large non-stick frying pan, heat oil over medium-high heat until hot. Reduce heat to medium and cook chicken for 6 minutes on each side until golden brown and cooked through. Place on paper towel to drain. Serve with mashed potato and green beans.
