Wholesome banana muffins to kickstart your day - low-fat, low-cholesterol, high-fiber, and ready in a flash!
Ingredients:
  • 4 bananas
  • 1 cup brown sugar
  • 2 egg whites
  • 1 egg
  • 3 tablespoons canola oil
  • 1.25 cups whole wheat flour
  • 1 cup rolled oats
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking powder
  • 12 paper muffin cup liners
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a muffin tin with 12 paper liners.
  • In a bowl, thoroughly mash bananas until smooth. Add brown sugar, egg whites, egg, and canola oil; mix well. Fold in flour, oats, baking soda, salt, and baking powder until just combined.
  • Spoon batter into each muffin cup, filling them 2/3 of the way full.
  • Bake in the oven until the tops bounce back when touched lightly, for 20 to 25 minutes.
