Bright beach day or cozy holiday spot, this refreshing recipe will delight your senses.
Ingredients:
  • 16 green prawns, peeled (tails intact), deveined
  • 60ml lemon juice
  • 4 small radishes, very thinly sliced (a mandoline is ideal)
  • 400g watermelon, peeled, cut into wedges
  • 50g watercress sprigs
  • 100g rocket leaves
  • 20.00 ml fresh oregano leaves
  • 100g low-fat feta, crumbled
Instructions:
  • Mix together prawns, dried oregano, 2 tablespoons of juice, and 2 tablespoons of oil. Season to taste and let it marinate for 15 minutes. After marinating, drain the prawns and discard the marinade.
  • Soak 16 bamboo skewers in a dish filled with hot water to prepare for grilling.
  • Heat up the barbecue to a sizzling medium-high temperature.
  • Skewer the prawns and grill for 2 minutes on each side until perfectly cooked.
  • Whisk together the rest of the juice and oil, season well, then mix with radish, watermelon, watercress, and arugula. Sprinkle fresh oregano and feta over the salad, and serve with prawns and lemon wedges.
