Charred chilli prawns with watermelon salsa

Spice up spring barbecues with zesty watermelon paired with chili and ginger BBQ prawns.
Ingredients:
  • 1kg large green prawns, peeled leaving tails intact, deveined
  • 1 long red chilli, seeded, finely chopped
  • 2 tsp ginger, finely grated
  • 1/4 seedless watermelon, finely chopped
  • 100g soft fetta, crumbled
  • 40.00 ml mint, finely shredded
  • Lime zest, to serve
  • Mint sprigs, to serve
Instructions:
  • Combine prawns, chili, and ginger in a large bowl. Chill in the fridge for 30 minutes to enhance the flavors.
  • Combine the refreshing watermelon, creamy feta, and fragrant shredded mint in a bowl.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill the prawns, turning occasionally, for 3 minutes or until they curl and change color. Place the grilled prawns on a serving platter. Top with the watermelon mixture and garnish with lime zest and fresh mint sprigs.
