Charred prawns with zesty chili, garlic, and fresh herbs.
Ingredients:
  • 500g green prawns, unpeeled
  • 36.40 gm olive oil
  • 7 cloves garlic, chopped
  • 4 small red chillies, seeded chopped
  • 100g butter, at room temperature
  • 40.00 ml dill, chopped
  • 40.00 ml parsley, chopped
  • Rustic baguette, to serve
Instructions:
  • Place prawns in a shallow dish and drizzle with oil. Add half of the garlic and chili, season generously, and toss to coat. Cover and refrigerate for 15 minutes to marinate.
  • In a bowl, mix half of the butter with the remaining garlic and chili until well combined. In another bowl, combine the rest of the butter with dill and parsley. Transfer both butter mixtures to serving dishes, cover, and chill until ready to use.
  • Grill prawns on high heat for 2-3 mins until they turn opaque. Serve with flavored butters and bread.
