Quick salt and pepper prawn skewers

Try zesty chargrilled prawns with ginger-lime mayo.
Ingredients:
  • 1kg raw prawns, peeled leaving tails intact, deveined
  • 7.20 gm sea salt flakes
  • 1/2 tsp ground white pepper
  • 1/2 tsp coarsely ground black pepper
  • 1/2 tsp Chinese five spice
  • 2 Lebanese cucumbers, peeled into ribbons
  • 1 long red chilli, thinly sliced diagonally (optional)
  • 2 spring onions, cut into matchsticks, soaked in iced water
  • 125.00 ml coriander leaves
  • 150g mayonnaise
  • 42.00 gm lime juice
  • 62.50 ml finely chopped coriander
  • 1 tsp finely grated ginger
Instructions:
  • Skewer prawns on bamboo sticks. Mix salt, pepper, and Chinese five spice in a bowl. Season prawns evenly with half of the spice mix.
  • For the ginger-lime mayo, mix together mayonnaise, lime juice, coriander, and ginger in a small bowl. Stir in 1 tablespoon of hot water until well combined.
  • Preheat a barbecue grill or chargrill to medium heat. Lightly coat the prawns with olive oil spray and grill for 2 minutes on each side until they are lightly charred and cooked through. Transfer the prawns to a plate and cover with foil.
  • Place cucumber slices, sliced chilli (if desired), spring onion curls, and fresh coriander on a serving platter. Add prawns on top and sprinkle with the remaining salt mixture. Serve right away with the ginger-lime mayonnaise.
