Delight your taste buds with quick and tasty garlic salt and pepper prawns for a fresh midweek seafood dinner.
Ingredients:
  • 20.00 gm rice flour
  • 2 tsp ground dried peppercorn medley (see notes)
  • 600g raw peeled prawns, tails intact
  • 56.88 gm extra virgin olive oil
  • 250.00 ml chopped fresh coriander leaves
  • 3 garlic cloves, finely chopped
  • 1 long red chilli, finely chopped
  • 65.63 gm lemon juice, plus lemon wedges to serve
  • Warm pita bread, to serve
  • Iceberg lettuce wedges, to serve
Instructions:
  • In a large snap-lock bag, mix flour, pepper, and salt. Add prawns and seal the bag tightly. Shake well to coat the prawns evenly in the flour mixture.
  • In a large frying pan over high heat, heat 1 tablespoon of oil. Cook half of the prawns, tossing gently, for 3 to 4 minutes until just cooked through. Transfer to a bowl. Repeat with the remaining prawns and 2 tablespoons of oil.
  • Add the prawns back to the pan and mix in the fresh coriander, garlic, spicy chilli, tangy lemon juice, and the rest of the oil. Cook while gently tossing for 2 minutes or until everything is warmed through. Present the delicious prawns alongside warm pita bread, crisp lettuce, and lemon wedges.
