Garlic-Herb Mashed Potatoes

Creamy garlic mashed potatoes with herbs, butter, and garlic are a must-have for any meal. Customize with gravy, butter, cheese, or simple salt and pepper. Perfect for Thanksgiving leftovers too!
Ingredients:
  • 3 pounds russet potatoes, peeled and cut into fourths
  • 1/4 cup butter or margarine
  • 2 cloves garlic, crushed
  • 3/4 cup milk
  • 2 tablespoons chopped fresh chives
  • 1/2 teaspoon chopped fresh thyme leaves
  • 1/2 teaspoon chopped fresh rosemary leaves
  • Salt and pepper to taste
Instructions:
  • In a 4-quart saucepan, cover potatoes with water and add 1 teaspoon of salt. Bring to a boil, then simmer uncovered for 20 to 30 minutes until tender. Drain and mash using a potato masher or electric mixer on low speed.
  • As the potatoes simmer, gently melt butter in a small saucepan over medium-low heat. Sauté garlic in the butter for 3 to 4 minutes, stirring often to avoid browning, until the garlic is softened. Add milk and herbs, and warm until fully heated.
  • Combine the milky mixture with the mashed potatoes until velvety. Then, whip until the texture is smooth and luxurious. Finally, season with salt and pepper to your liking.
