Elevate dinner with easy loaded Boursin mashed potatoes featuring a rustic look and vibrant garlic-herb flavor. Skip the peeling for a clever twist on creamy classics.
Ingredients:
  • 1-1/2 pounds unpeeled bite-size baby potatoes, halved
  • 1 (5.2 ounce) package gournay cheese, such as Boursin® Garlic and Fine Herbs Cheese, cut into chunks
  • 1/4 cup melted unsalted butter
  • 2 tablespoons grated Parmesan cheese
  • 2 strips cooked and crumbled bacon
  • 1/4 cup warmed half-and-half, or more if needed
  • 1 tablespoon chopped parsley
Instructions:
  • In a large pot, arrange the potatoes and season with salt. Cover the potatoes with cold water by about an inch. Bring to a boil over medium-high heat with a partially covered lid. Lower the heat to medium and simmer until the potatoes are fork-tender, for about 15 to 20 minutes. Drain and return to the pot.
  • In a skillet over medium-high heat, cook bacon until evenly browned, turning occasionally for about 7 minutes. Drain on paper towels and crumble once cooled.
  • Mash potatoes using a potato masher or electric mixer on low speed, then mix in Boursin, butter, Parmesan, and bacon.
  • Gradually incorporate half-and-half while mashing until achieving desired consistency, adding more if needed. Season with salt and pepper to taste.
  • Plate the dish, sprinkle with fresh parsley for a pop of color, and enjoy your delicious creation.
