Asian-inspired crunchy bites perfect for entertaining. Sprinkle with sliced red chili, spring onions, and sesame seeds for added flair.
Ingredients:
  • 9.20 gm vegetable oil
  • 1 spring onion, thinly sliced
  • 1 long red chilli, thinly sliced (optional)
  • 1 garlic clove, crushed
  • 125ml tamari
  • 55g caster sugar
  • 1 tsp sesame oil
  • 9.60 gm sea salt flakes
  • 20.00 ml black peppercorns
  • 1 tsp dried chilli flakes (optional)
  • 45g rice flour
  • 2 x 300g pkts firm tofu, cut into 2cm pieces
  • Vegetable oil, extra, to shallow-fry
Instructions:
  • In a saucepan, heat vegetable oil over high heat. Add spring onion, sliced chilli (if using), and garlic; cook for 1 minute until fragrant. Reduce heat to low, then stir in tamari or soy sauce and sugar. Cook for 3 minutes until sugar dissolves. Simmer for 5 minutes until sauce thickens, then stir in sesame oil.
  • Crush sea salt, peppercorns, and optional chili flakes in a mortar and pestle or spice grinder. Combine with rice flour in a medium bowl. Coat tofu in the mixture, shaking off excess.
  • In a medium frying pan, pour enough oil to reach 1cm up the side. Heat over medium heat. Cook the tofu in 2 batches, turning occasionally, until golden brown, about 5 minutes per batch. Transfer to a paper towel-lined plate.
  • Present the tofu elegantly on the platter and accompany it with the sauce.
