Transform your Christmas Eve turkey with a simple, game-changing flavored butter. Enhance Mr. Kelly's beautiful turkey with a blend of olive oil, salt, and pepper, plus a heavenly flavored butter that adds sweetness and boosts natural flavors. This butter not only creates crispy skin but also ensures a self-basting, perfectly cooked bird. Elevate your holiday feast with this irresistible enhancement.
Ingredients:
  • 1 x 250 g pack of butter
  • 75 g dried cranberries
  • a few sprigs of fresh thyme
  • 4 sprigs of fresh rosemary
  • a few sprigs of fresh sage
  • 1 clementine
Instructions:
  • Place the butter in a bowl. Finely chop the cranberries and add them to the bowl. Chop the thyme, rosemary, and sage leaves until finely minced. Add the herbs to the butter along with a pinch of sea salt and black pepper. Grate in the clementine zest and mix well until the butter softens and everything combines. Divide the butter in half. Carefully slide your hand between the turkey skin and meat to create a cavity. Push half of the butter mixture into the cavity, distributing it evenly. Repeat on the other side and rub any remaining butter on the outside of the turkey. Place any leftover herb stalks in the turkey cavity for added flavor. Cover the turkey with clingfilm and refrigerate until ready to cook the following day.
