Festive mini peanut butter Christmas cookies - ideal for entertaining or gifting!
Ingredients:
  • 0.5 cup unsalted butter, at room temperature
  • 0.25 cup light brown sugar
  • 0.5 cup peanut butter
  • 1 large egg
  • 1 tablespoon sour cream
  • 0.5 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.125 teaspoon baking soda
  • 0.5 cup strawberry jam
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 3 to 4 baking sheets by lining them with parchment paper.
  • Prepare a decadent mixture by combining butter, white sugar, and brown sugar in a bowl and using an electric mixer to reach a fluffy texture. Then, gently incorporate peanut butter and egg before adding sour cream and vanilla extract for a delightful twist.
  • Combine flour, baking powder, and baking soda in a separate bowl. Incorporate into the peanut butter mixture until well blended.
  • Take a teaspoon of dough and roll into small balls. Space them 2 inches apart on the baking sheets. Use a chopstick to make an indentation in the center of each cookie.
  • Bake in the preheated oven until lightly browned, approximately 15 minutes, then allow to cool completely for 20 to 30 minutes before filling each with strawberry jam.
