Creamy peanut butter cookies transformed into adorable mice with peanut ears, candy eyes, and licorice tails.
Ingredients:
  • 0.5 cup butter, room temperature
  • 1 cup creamy peanut butter
  • 0.5 cup packed light brown sugar
  • 1.5 cups all-purpose flour
  • 1 cup peanut halves
  • 0.25 cup green candy sprinkles
  • 60 3-inch pieces red shoestring licorice
Instructions:
  • In a large bowl, cream together butter and peanut butter until smooth. Add brown and white sugar, beat until light and fluffy. Mix in egg, vanilla extract, and baking soda until well incorporated. Gradually stir in flour until just combined. Cover and refrigerate for 1 hour until firm.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Roll 1 level tablespoon of dough into balls, then shape them into teardrops and flatten one side. Arrange the shaped dough on ungreased cookie sheets, 2 inches apart with the flat side down. Create a slight indentation on the sides of each dough to raise the 'backs' of the mice.
  • Insert 2 peanut halves into each 'mouse' for ears, and place 2 pieces of green candy for eyes. Use a toothpick to create a hole 1/2 inch deep in the tail ends.
  • Place in a heated oven for 8 to 10 minutes, or until the texture is firm.
  • Place on a cooling rack and garnish with licorice pieces as tails.
