Spiced salt-baked prawns

Elevated salt-and-pepper prawns with a modern Chinese spice infusion.
Ingredients:
  • 1kg natural rock salt
  • 2 tsp Chinese five spice
  • 7 whole star anise (see note)
  • 250g grape tomatoes
  • 500g green prawns, peeled, deveined
  • 60ml (1/4 cup) lemon juice
  • 36.40 gm olive oil
  • 4.00 gm brown sugar
  • 250.00 ml watercress sprigs
  • 250.00 ml fresh coriander leaves
  • 60ml (1/4 cup) rice bran oil
  • 20.00 ml coarsely chopped pistachio kernels
  • 2 tsp finely grated lemon rind
Instructions:
  • Preheat oven to 220°C. Warm salt in a large, heavy-based baking dish for 5 minutes. Mix in Chinese five spice and top with star anise.
  • Place the tomatoes on a bed of salt and bake until just soft, approximately 5 minutes. Add the prawns and continue baking for 8 minutes or until prawns curl and change color. Transfer to a plate using tongs.
  • Make a flavorful coriander pistou by blending coriander, oil, pistachios, garlic, and lemon rind in a food processor until smooth. Add seasoning to taste.
  • Whisk together the zesty lemon juice, flavorful oil, and sweet sugar in a bowl. Don't forget to season to enhance the flavors.
  • Arrange a vibrant display on plates with coriander pistou, succulent prawns, fresh tomatoes, and peppery watercress. Finish with a generous drizzle of zesty lemon juice mixture.
