Create a vibrant rub with just four ingredients to elevate the flavor of your meats.
Ingredients:
  • 6 makrut lime leaves, shredded
  • 2 tsp Sichuan peppercorns
  • 1/2 tsp Chinese five spice
  • 40g (1/4 cup) sea salt flakes
Instructions:
  • Preheat the oven to 150°C. In a mortar, crush lime leaves, Sichuan peppercorns, Chinese five spice, and salt with a pestle until coarsely crushed.
  • Place on a baking tray and bake in the oven for about 5 minutes until dry. Allow to cool completely before using.
