Salt and pepper pork with Asian greens

Elevate pork medallions with bold Chinese spices for a flavorful twist that will impress your family.
Ingredients:
  • 20.00 gm cornflour
  • 9.60 gm sea salt flakes
  • 2 tsp cracked black pepper
  • 1 tsp Chinese five-spice
  • 4 (150g each) pork loin medallions, trimmed
  • 36.40 gm peanut oil
  • 48.80 gm oyster sauce
  • 28.60 gm honey
  • Steamed baby choy sum, steamed
  • Broccolini, to serve
  • Lime wedges, to serve
Instructions:
  • In a large zip-top bag, mix cornflour, salt, pepper, and spices. Add pork. Shake well to coat evenly.
  • In a large frying pan, heat oil over medium-high heat. Cook pork for 3 to 4 minutes per side, or until fully cooked. Transfer to a plate and loosely cover with foil to keep warm.
  • In a pan, combine oyster sauce, honey, and 2 tablespoons of cold water. Bring to a boil while stirring. Then, reduce the heat to low and simmer for 2 minutes until thickened. Slice the pork into 1cm-thick pieces, then drizzle with the sauce. Serve with choy sum, broccolini, and lime wedges.
