Enhance pork chops' flavor and tenderness by brining before grilling for juicy results. Learn how to create perfect grilled pork chops with this easy recipe.
Ingredients:
  • 4 1/2 cups pork chop brine
  • 4 bone-in pork rib chops, each about 2 inches thick
  • 1 1/2 teaspoons Morton's kosher salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon sweet paprika
  • Pinch of cayenne pepper, optional
  • 1 tablespoon vegetable oil, plus more for grill
Instructions:
  • Prepare the pork chops: Submerge the pork chops fully in the cooled brine in a large pot or bowl. To keep them submerged, you can place a heavy plate on top. Refrigerate covered for 1 hour. Remove the pork chops from the brine, rinse under cold water, pat dry with paper towels, and let them come to room temperature on a platter as the grill heats up.
  • Prepare the grill: Clean the grill grates with a grill brush. Then, generously coat a wad of paper towel with vegetable oil and rub it along the grates. For gas grills, preheat one side to 400°F or high, leaving the other side off. For charcoal grills, spread hot coals on one half and leave the other half empty.
  • Prepare the spice rub by mixing salt, cumin, black pepper, paprika, and cayenne pepper in a bowl. Rub both sides of the pork chops with oil, then generously coat them with the spice rub by massaging it into the meat.
  • Preheat the grill to 400°F. Place the pork chops on the hot side of the grill and press down with a spatula. Sear for 4 minutes without flipping. Flip and sear for another 4 minutes. Move the pork chops to the cool side, close the lid, and cook for 15-20 minutes until the internal temperature reaches 145°F.
  • Let the grilled pork chops rest: Transfer them to a platter, cover loosely with foil, and rest for 5 minutes before serving to let the juices settle. Share your feedback with us below!
