Tangy pineapple slaw complements juicy grilled pork chops.
Ingredients:
  • 500.00 ml shredded Chinese cabbage (wombok)
  • 2 medium carrots, peeled, coarsely grated
  • 1 small red capsicum, thinly sliced
  • 3 green onions, thinly sliced
  • 440g can crushed pineapple, drained
  • 132.50 gm coleslaw dressing
  • 18.20 gm olive oil
  • 4 small (200g each) pork cutlets, trimmed baby rocket, to serve
Instructions:
  • In a spacious bowl, mix cabbage, carrot, capsicum, onion, and pineapple. Pour in the dressing and toss until everything is evenly coated.
  • Preheat a barbecue plate or chargrill over high heat. Massage both sides of the pork with oil and season generously with salt and pepper. Lower the heat to medium and grill the pork for 5 minutes on each side until fully cooked. Serve with coleslaw and baby rocket.
