Elevate pork chops with sweet pineapple, brown sugar, caramelized red onions, and creamy goat cheese for a delightful everyday meal.
Ingredients:
  • 2 teaspoons chipotle chile powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon onion powder
  • 1 (8 ounce) can pineapple rings, drained and juice reserved
  • 1 tablespoon olive oil, divided
  • 1 red onion, thinly sliced
  • 0.25 cup brown sugar
  • 4 boneless pork chops
  • salt and ground black pepper to taste
  • 0.25 cup crumbled goat cheese
Instructions:
  • Mix chipotle powder, garlic powder, cinnamon, and onion powder in a small bowl.
  • Blot pineapple rings with a paper towel.
  • In a large nonstick saucepan over medium-high heat, heat up 1 teaspoon of olive oil. Add pineapple rings and red onion, then sprinkle with 3 tablespoons of reserved pineapple juice and brown sugar. Cook until pineapple is lightly browned, about 3 minutes per side. Transfer the pineapple-onion mixture to a plate.
  • Blot pork chops dry and gently season with salt and pepper on both sides.
  • In the same saucepan, heat the remaining 2 teaspoons of oil over medium-high heat until it shimmers. Add the chops and cook until the bottom is browned, approximately 3 minutes. Flip the chops and sprinkle the chipotle mixture on top. Cook until the other side is browned, about 3 minutes. Keep flipping and cooking until the center is no longer pink, for an additional 3 to 5 minutes. Use an instant-read thermometer to ensure the center reaches 145 degrees F (63 degrees C).
  • Place the chops on a plate and generously heap the pineapple-onion mixture over them. Finish by sprinkling a layer of goat cheese on top.
