Sweet and tangy pineapple pork chops with brown sugar sauce - irresistibly delicious!
Ingredients:
  • 4 boneless pork chops
  • 1 (14.5 ounce) can chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 0.5 cup pineapple juice
  • 2 tablespoons brown sugar
  • 1 (15 ounce) can pineapple chunks, drained
Instructions:
  • In a skillet set over medium heat, heat oil. Sear pork chops for 5 minutes on each side until golden brown. Place the chops on a plate.
  • Pour in the flavorful combination of broth, soy sauce, and vinegar into the skillet and bring to a boil. Add the chops back to the skillet, lower the heat, and simmer until fully cooked, approximately 20 minutes. Use a thermometer to verify the internal temperature of at least 145 degrees F (63 degrees C). Remove the skillet from the heat, transfer the chops to a plate to keep warm, and retain the delicious cooking liquid in the skillet.
  • Combine the pineapple juice, brown sugar, and cornstarch in a bowl and mix well.
  • Combine pineapple juice mixture with cooking liquid in skillet. Simmer over medium-low heat until sauce thickens slightly and comes to a gentle boil, stirring occasionally. Stir in pineapple chunks and cook until heated through, about 1 to 2 minutes. Serve the sauce with chops.
