Whip up delicious honey balsamic pork chops with zesty pineapple salsa for a speedy weeknight dinner.
Ingredients:
  • 28.60 gm honey
  • 20.00 ml balsamic vinegar
  • 21.00 gm light soy sauce
  • 2 garlic cloves, crushed
  • 4 x 200g pork loin chops
  • 18.20 gm peanut oil
  • 1/2 pineapple, cut into 1cm pieces
  • 62.50 ml mint leaves
  • 1 long red chilli, seeded, cut into thin strips
  • 1/2 small red onion, finely chopped
  • 21.00 gm lime juice
  • 4.60 gm peanut oil, extra
  • Steamed long-grain rice, to serve
  • Lime wedges, to serve
Instructions:
  • In a spacious bowl, blend together honey, vinegar, soy sauce, and garlic. Add the pork and ensure it's evenly coated with the mixture.
  • In a large frying pan over medium heat, heat oil. Add pork and cook for 3 minutes on each side, or until fully cooked. Transfer to a plate and let it rest for 5 minutes.
  • In a medium bowl, mix pineapple, mint, chili, onion, lime juice, and peanut oil. Season with salt and pepper. Serve the pork with steamed rice, pineapple salsa, and lime wedges.
