Sweet and tangy chicken salad with goat cheese, cherries, and honey-balsamic dressing - a delicious and healthy meal for all!
Ingredients:
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 4 boneless skinless chicken breasts
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon freshly ground pepper
  • 6 cups mixed greens, packed
  • 1/2 cup dried unsweetened cherries
  • 2 oz chèvre (goat) cheese, crumbled (1/2 cup)
  • 1/4 cup fresh thyme leaves
Instructions:
  • Preheat broil setting on the oven. Prepare a foil-lined cookie sheet and coat it with high heat cooking spray.
  • Combine the Chicken ingredients in a large bowl and toss to coat evenly. Spread the chicken on a baking sheet and broil with the tops 4 inches from the heat for 8 to 10 minutes, turning once, until a meat thermometer inserted in the center reads at least 165°F.
  • Whisk together Vinaigrette ingredients in a large bowl. Add mixed greens and toss to coat evenly. Serve the dressed greens on 4 plates.
  • Slice chicken breasts diagonally into 1/2-inch slices. Arrange sliced chicken on salad greens, top with cherries and goat cheese. Sprinkle with thyme and pepper. Serve promptly.
