Impress your friends with a delicious and healthy Chinese dish for a quick lunch!
Ingredients:
  • 1 bag (10 ounces) salad mix (8 cups)
  • 1/2 cup Chinese plum sauce
  • 1/4 cup water
  • 3 tablespoons rice vinegar or cider vinegar
  • 1 teaspoon cornstarch
  • 1/2 teaspoon ground mustard
  • 3/4 pound boneless skinless chicken breast, cut into 1/4-inch slices
  • 1 large carrot, shredded (1 cup)
  • 3 medium green onions, sliced (3 tablespoons)
Instructions:
  • Combine the plum sauce, water, vinegar, cornstarch, and mustard for a flavorful sauce.
  • Prepare the wok or a 12-inch skillet with cooking spray and heat over high heat. Cook the chicken until no longer pink in the center, about 2 minutes. Then, add the carrot and onions, and stir-fry for 1 more minute.
  • Add the plum sauce mixture and stir until it boils while constantly stirring. Let it boil and stir for 1 minute. Take the chicken mixture out of the wok and refrigerate for about 30 minutes until it cools down. Serve over salad mix.
