Spring chicken salad with refreshing orange and yogurt dressing.
Ingredients:
  • 2 oranges
  • 400g cooked chicken, thinly sliced
  • 310g can corn kernels, drained
  • 200g mixed salad leaves
  • 130g (1/2 cup) low-fat Greek-style natural yoghurt
  • 10.00 gm mango chutney
  • 14.00 gm mild curry paste
  • 55g (1/3 cup) pistachio kernels, coarsely chopped
Instructions:
  • Prepare the oranges by cutting off the top and base. Peel off the skin and white pith using a knife. Hold each orange over a bowl to catch any juice and carefully cut along the white membranes to remove the orange segments. Keep the juice for later use.
  • In a large serving bowl, mix together the chicken, corn, salad leaves, onion, and orange segments.
  • Combine the yoghurt, chutney, curry paste, and reserved orange juice in a bowl. Pour over the salad and sprinkle with pistachios.
