Whip up a speedy and nutritious lunch with our zesty chicken tahini salad in just 10 minutes!
Ingredients:
  • 10.60 gm fresh lemon juice
  • 10.00 gm hot water
  • 6.00 gm gluten-free tahini
  • 30g baby spinach
  • 60g cooked skinless chicken breast, shredded
  • 125g can black beans, rinsed, drained
  • 1/2 Lebanese cucumber, halved lengthways, sliced
  • 1 small carrot, peeled, coarsely grated
  • 1/4 avocado, sliced
Instructions:
  • Mix the fresh lemon juice, water, and creamy tahini in a bowl, then season to taste.
  • Place the spinach, chicken, beans, cucumber, carrot, and avocado elegantly on a platter. Finish by drizzling the dressing over the top before serving.
