Try a quick Cajun chicken rice bowl with avocado and mango for a delicious weeknight dinner!
Ingredients:
  • 4 RSPCA Approved Chicken Thigh Fillets, cut into 3cm pieces
  • 15.00 gm Cajun seasoning
  • 9.20 gm olive oil
  • 450g pkt microwavable brown rice
  • 1 avocado, stoned, peeled, thinly sliced
  • 1 red capsicum, seeded, thinly sliced
  • 1 mango, stoned, peeled, finely chopped
  • 1/2 red onion, finely chopped
  • 250.00 ml coriander leaves
  • 100g mayonnaise
  • 1.25 gm ground paprika
  • 21.00 gm lime juice
  • Lime wedges, to serve
Instructions:
  • In a large bowl, coat the chicken with 1 tablespoon of Cajun seasoning and toss well to combine.
  • Preheat a large frying pan over medium-high heat. Cook the chicken mixture in 2 batches, turning occasionally, for about 5 minutes or until fully cooked. Transfer to a bowl.
  • 1. Heat oil in a pan over medium heat until shimmering. Stir in the rest of the Cajun seasoning, cook for 1 minute until aromatic. Add rice and ⅔ cup (160ml) water. Cook for 6-7 minutes, stirring occasionally, until the water evaporates. Remove from heat.
  • Portion the rice into individual serving bowls then layer with creamy avocado, vibrant capsicum, succulent chicken, sweet mango, aromatic onion, and fresh coriander. Whisk together mayonnaise, paprika, and zesty lime juice in a separate bowl, then generously drizzle over the colorful toppings. Accompany with lime wedges for an extra burst of flavor.
