Make flavorful Mediterranean pork chops with sage and rosemary herb rub for a delicious and easy meal.
Ingredients:
  • 2 teaspoons dried sage, crumbled
  • 2 teaspoons dried rosemary leaves, crumbled
  • 1.5 teaspoons salt
  • 1 teaspoon dried thyme
  • 1 teaspoon fennel seed, crushed
  • 0.5 teaspoon white sugar
  • 1 bay leaf, crumbled
  • 4 bone-in pork rib chops (not pork loin chops) - at least 1/2-inch thick
  • 0.33333334326744 cup extra-virgin olive oil
Instructions:
  • Combine sage, rosemary, salt, thyme, fennel, sugar, and bay leaf in a bowl, ensuring they are fully mixed.
  • Massage the herb mixture onto both sides of the pork chops, then generously coat them with luscious olive oil. Chill in the fridge for several hours or overnight to enhance the flavors.
  • Get your outdoor grill ready by preheating it to a medium heat and giving the grate a light oiling.
  • Grill chops until nicely browned with distinct grill marks, and the internal meat is no longer pink, about 4 minutes per side. Use a meat thermometer to ensure the thickest part of the chop reaches at least 145°F (63°C).
