Mediterranean Grilled Snapper

Grilled fish with Mediterranean olives, herbs, perfect for a romantic dinner!
Ingredients:
  • 3/4 lb red snapper fillets, cut into 2 serving pieces
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh rosemary
  • 1 clove garlic, finely chopped
  • 2 tablespoons chopped ripe olives
  • 1/2 small zucchini, sliced (1/2 cup)
  • 1/2 small tomato, chopped (1/4 cup)
Instructions:
  • Place the fish in an 8-inch square (2-quart) glass baking dish. Combine oil, lemon juice, basil, rosemary, and garlic in a small bowl, then pour over the fish. Refrigerate for 2 hours to marinate.
  • Take out the fish from the marinade and keep it aside. Transfer the marinade to a 1-quart saucepan and combine with olives, zucchini, and tomato. Cook over medium heat for 4 to 5 minutes, stirring occasionally, until the zucchini is just tender.
  • Preheat gas or charcoal grill. Brush grill rack with canola oil. Grill fish, skin sides down, covered, over medium heat for 10 to 15 minutes or until fish flakes easily with fork. Top fish with tomato olive mixture.
