Ingredients:
  • 1000.00 gm (1 litre) water
  • 500ml chicken stock
  • 225.00 gm fine polenta
  • 30g butter
  • 165.00 ml drained semi-dried or sundried tomatoes, finely chopped
  • 165.00 ml pitted Kalamata olives, finely chopped
  • 62.50 ml finely chopped fresh continental parsley
  • 187.50 ml shredded parmesan
  • Salt & freshly ground pepper
  • Chargrilled fish or pan-fried fish, to serve
  • Dressed salad, to serve
Instructions:
  • In a saucepan, combine water and stock and bring to a boil. Add polenta while stirring constantly. Reduce heat to medium-low and continue stirring for 25-30 minutes until thick and creamy.
  • Take the pan off the heat and mix in butter, tomatoes, olives, garlic, parsley, and parmesan until the butter is melted and all the ingredients are thoroughly combined.
  • Transfer the mixture into a greased 18 x 28cm (base) slab pan and swiftly flatten the surface using the back of a spoon. Let it cool and set at room temperature.
  • Cut into portions and remove from pan. Spray both sides of polenta with oil. Grill on high for 4-5 minutes each side. Serve alongside fish and salad.
