Mediterranean Grilled Tuna Sandwich

Switch it up with a delicious grilled Mediterranean tuna sandwich.
Ingredients:
  • 1/4 cup olive or vegetable oil
  • 1 tablespoon chopped fresh or 1 teaspoon dried thyme leaves
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon salt
  • Dash of pepper
  • 1 clove garlic, finely chopped
  • 1/2 pound tuna, or marlin fillets, 3/4 to 1 inch thick
  • 1 medium tomato, seeded and coarsely chopped (3/4 cup)
  • 1/4 medium red onion, thinly sliced
  • 2 tablespoons chopped pitted kalamata or ripe olives
  • 2 tablespoons chopped fresh Italian or regular parsley
  • 2 teaspoons capers
  • 1 loaf (1/2 pound) unsliced crusty Italian, French or sourdough bread
  • 2 leaves romaine lettuce, shredded
Instructions:
  • Combine the oil, thyme, vinegar, salt, pepper, and garlic in a bowl. Pour half of the mixture over the fish fillets in a shallow glass or plastic dish, ensuring the fish is well coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes but no more than 1 hour. Mix the remaining oil mixture with tomato, onion, olives, parsley, and capers. Cover and refrigerate.
  • Preheat grill for direct heat. Take fish out of marinade and set marinade aside. Grill fish 5 to 6 inches from medium heat for 10 to 15 minutes, brushing with marinade 2 to 3 times and flipping once, until fish flakes easily. Break fish into chunks.
  • Trim off the top one-third of the bread loaf and hollow out both parts, keeping a 1/2-inch-thick crust. Place romaine on the bottom half of the bread, layer with fish, then spoon tomato mixture over the fish. Place the top piece of the bread back on. Wrap the loaf in plastic wrap or foil and chill for 30 to 60 minutes. Unwrap and slice into 4 pieces before serving.
